Popular for weddings, these crunchy almonds are an ancient symbol of hope in many cultures. We carefully roast the almonds and let them cool overnight. Then we place the roasted almonds in a revolving pan where a sugar water solution is sprayed on them as they roll. We build up successive coats until the almonds have a hard, shiny covering. The name Jordan Almonds comes from the Greek and Mediterranean countries where this almond was coated to preserve it for future weddings, holidays, and festivities. Eating the Jordan Almond is considered a symbol of good luck!

We start with large premium almonds from the finest orchards and carefully roast them to perfection. Next we let it cool overnight. Then we load them in a chocolate pan, drizzling them with chocolate as the drum turns. This takes about 1-1/2 hours and requires exacting work. Once a thick chocolate layering has been added, we load the entire batch into a ribbed finishing pan for another 1/2 hour to give these nuts their glossy finish. We end up with a spectacular product - gourmet chocolate covered almonds!

For cooking and baking, sometimes you need an almond without the skin. This "blanching" is a multiple-step process. First, the almond is scalded in boiling water, much like blanching a peach, and then immediately dipped in cold water to make the soft skin separate from the nut kernel. Then the nut and skin are "spit" through rollers to remove the nut and skin and finally the nut is dried over a conveyer belt using a special drying oven. The blanched almond costs more because of the extra processing, but also because it weighs less without the skin!

This is a real specialty product, used often as an ingredient that provides distinctive almond flavor. For example, a coffee company may use it to add nutty flavor in grinding coffees. The white color contrasts with the coffee dark bean for appearance and taste. When we make this product the almond skin is removed (called blanching) and the almond is sliced like a shoestring potato.

When we need a sliced almond, we fire up our Urschel CC slicer and get ready to slice up to 4,000 pounds of almonds an hour! The almond has to be heated to about 160 degrees to make it just tender enough for cutting -- too much heat and it cooks the almond thoroughly, too little heat and the cold nut shatters. Bakeries and candy manufacturers love to use sliced almonds for garnishing their specialties. We are the only firm in the northwestern United states slicing almonds and we have done this since 1982 for thousands of customers.
