This smallest coconut cut is called "Macaroon" and is a tiny fleck about 1/16" in size. It is usually used by candy makers for a coconut taste with an extremely fine texture. Sometimes you see macaroon used in the bakery trade, but we're glad to make it available for your baked goods at home too.
This unsweetened cousin of Angel Flake coconut is especially good in savory dishes. It also adds great taste and texture to baked goods and is a wonderful garnish for cakes and cookies. This flake is about 1/8" wide and about 1-1/2" long, strong enough to withstand handling, but not easily broken because it retains so much moisture.
Sliced Ribbon Unsweetened Coconut

The chip or sliced flat-cut coconut is often in demand. This is a very thin ribbon, 1/2" wide and as long as possible (often up to 2"). Becayse it breaks easily, this style is hard to find and often not available in small quantities for the home cook. We love this product for our trail mixes, but you might use it for any kind of snack where you want a firmer coconut texture. Because it is unsweetened, the sliced coconut is especially good in savory dishes.
