Ginger Candied Slices
The finest ginger is raised in Australia. Because their months are opposite ours, their crop comes up in October when we get the tenderest shoots. These tendershoots are popular with the candy makers and the dried fruit venders, and we always try to carry a large inventory of this item as it arrives in late fall in the United states just in time for X-MAS. In December the second cutting ginger root occurs and this rootstock is not as tender as the first ginger cutting. This second cutting is often shipped and displayed in produce departments in grocery stores. It is a gnarled rootstock and is not really very interesting. In February the third root cutting occurs and this is the least popular ginger because it is older and tougher. It has a lower quality. Much of this third cutting is extremely strong tasting and is shipped to the spice industry to grind and use for seasonings.

To store almonds:
Use properly sealed plastic bags or glass jars. Store at 70 degrees or lower. You can
store at 32 to 35 degrees in refrigerator for up to 18 months, if sealed well.

Very Favorite Recipes
Curry
Almond Spread
a wonderful dip recipe
16 oz.
cream cheese
2 tsp. curry
1 cup chutney
1/2 tsp. mustard
3/4 cups sliced
almonds
1 or 2 green onions
Combine
the cream cheese, 1/2 cup chutney, curry and mustard.
Place in a bowl lined with plastic and refridgerate. When ready to serve, turn
onto a platter, top with the remaining chutney, slivered almonds, and sliced green onions.
Serve with crackers.
