Cholesterol and Nuts
(a recent study finds new facts)

Could the next health craze be, quite literally, nuts?  A new study concludes that nuts lower cholesterol.

Researchers have assembled two different lines of evidence suggesting that nuts in general and walnuts in particular are good for the heart.  The study was published in the New England Journal of Medicine in March, 1993.

31,208 seventh day Adventists who generally avoided smoking and drinking were the subjects for the study.  Researchers questioned them about their consumption of 65 different foods.

To the researchers surprise, those who ate nuts at least five times a week had only about half as many fatal hear attacks as those who had nuts less than once a week.  These results, along with other studies, were published in the Archives of Internal Medicine in 1992 along with comments from the Framingham Heart Study group.

 

On the no nut diet, the volunteers cholesterol levels fell 6 percent.  When they switched to the walnut diet, their cholesterol level dropped an additional 12% or a total reduction of 18%.  Everybody's cholesterol level dropped while eating nuts, and the average decrease was 22 points from 182 to 160.

Our favorite recipes

Curry Almond Spread
a curry dip

16 oz cream cheese
1 cup chutney
3/4 cup sliced almonds
2 tsp curry
1/2 tsp mustard
2 green onions, sliced

Toast the sliced almonds in oven broiler for a couple of minutes until browned slightly.. 

Combine cream cheese, 1/2 cup chutney, curry, and mustard.  Place in a plastic wrap-lined bowl and refrigerate.

When ready to serve, turn out unto platter, top with remaining chutney, almonds, and green onions.  Serve with crackers.
