Chocolate Nuts



The covering of freshly roasted nuts with a pure chocolate coating is an art. There are not a lot of firms that "pan" chocolate over nuts. You take 50 pounds of roasted nuts. Using a sophisticated chocolate pump, we place 200 of pure chocolate over the nuts. Once they have gotten the proper size, we take the chocolate covered nuts into a finishing drum. In the finishing drum we add gum arabic slowly and build up a shiny, hard coating. Eventually when we have added enough gum arabic, the outer shell forms a protective covering to hold in the freshness of the chocolate and nuts..
