Assorted Jordan Almonds
We carefully roast the almonds and let them cool overnight. Then we place the roasted almonds in a revolving pan. A sugar water solution is sprayed on the roasted almonds as the almonds roll around the pan. We build up successive coats until the almonds have a hard, shiny covering. The name Jordan Almonds comes from the Greek and Mediterranean countries where this almond was coated to preserve it for future weddings, holidays, and festivities. Eating the Jordan Almond is considered a symbol of good luck!

Bakers Glazed Buttons
A hard chocolate center core is made by the tens of thousands per hour. These cores are then put in a pan and a coating process of colored cold syrup sugar mixture is applied. It dries between coats using a jet of refrigerated air in the pan and then another layer of sugar syrup is applied until at least ten layers are built up. The button is then finished in a ribbed finishing pan to give the buttons the final shine and polish.

Boston Baked Beans
This is one of the oldest hard sugar candies and was extremely popular just after World Ward II in the 1950's. Every kid went to the show and got a box of Boston Baked Beans for a nickle or less. The core is a freshly roasted peanut which is cooled and placed in a pan. The peanut is coated with a starch/gum coating and dried. Then the cold colored sugar syrup layers are carefully added until at least 10 layers are applied. The final coating is once again made in a finishing ribbed pan where the shine and polish is done.

French Burnt Peanuts
This is really a similar product to the Boston Baked Bean candy, but in the last stage of making the French Burnt peanut, the sugar coating is allowed to "stipple" or make bumps by adding a special coating. As it turns i nthe finishing drum the coating is pulled outward from the candy and forms a bumpy surface. The stippled sugared peanut was first seen in Europe and then made its way to the United States where its popularity has endured over 70 years.

Hoarhound Drops
One of the oldest candies still sold is the hoarhound drop. Horehound and hoarhound are two of several ways it is spelled. The local pharmacist used to have to mask his medicine in a syrup. Eventually it became obvious that if the syrup could be poured into molds and cooled, it would form a drop that could be sucked and would give the medicine a lot more time to drip down the throat. The licorice and anise plants added a nice touch because they were strong aromatics. Pretty soon in the 1920's it became popular to sell cough drops under the title of hoarhound drops which were used to cure the sore throat. That is the origin of this wonderful suck candy, which is as old as any candy still sold!

Lemon Drops
Much like the hoarhound drop, the old fashioned candies were really created to mask tastes. The lemon drop is a traditional candy placed in genteel women's mouths and lightly sucked during afternoon gatherings. Lemon drops are a hard candy made of sugar and water, color and flavorings. Lemon drops also were used as a traditional old-fashioned medicinal, bought in drug stores to mask the taste of medicine. Today lemon drops are considered a favorite old fashioned candy.

Peanut Butter Logs
The common name for this was "chickenbones". Two companies made it for decades and the eastern version used a hard covering. Out west a softer covering was more traditional. The popularity lead to the butterfinger bar. The inside is a honey comb peanut butter center and the finish candy is dusted in a toasted coconut to keep the spun sugar from sticking to adjoining pieces. It is a very popular candy.

Wrapped Caramels
If you love the chewy sweet taste of caramel, these are sure to satisfy. The caramel is made by combining sugar (2 cups), corn syrup (1-1/4 cups), cream (1/2 cup) in a 2 qt heavy saucepan, stiring over medium heat until sugar dissolves and cooking to soft ball stage (236 degrees). Then stir in another 1/2 cup cream, and cook again to soft ball stage (236 degrees). add remaining 1/2 cup cream and cook mixture to firm ball stage (242 degrees).. Stir often as caramel mixture thickens. Remove from heat and stir in vanilla (1 tsp) and salt (1/4 tsp). Mold finished caramel mixture to a shape before it cools and sets.
