Chocolate Pecans
We take fresh pecan jumbo pecan halves and carefully roast them to perfection. They are left to cool overnight. Then we load 150 pounds of roasted pecans in a chocolate pan and add exact amounts of chocolate in layers as the drum turns. This takes about 1-1/2 hours and requires exacting work.

Once the proper amount of chocolate layering has been completed, we load the entire batch into a ribbed finishing pan that will be used to apply a final glazing compound. This makes the finished product shine. This takes about another 1/2 hour.

We end up with a spectacular product - chocolate covered pecans with a buttery taste!

Chocolate Double Dipped Peanuts
We take the fresh redskin peanuts and carefully roast them to perfection and let it cool overnight. Then we load 150 pounds in a chocolate pan and add exact amounts of chocolate as the drum turns. This takes about 1-1/2 hours and requires exacting work. Once the proper amount of chocolate layering has been completed, we place each peanut in an enrober which refloods the chocolate peanut with more chocolate. Hence the name "double-dipped". This makes for a thicker and richer nut and is especially good with peanuts because it brings out the flavor. We end up with a spectacular product - chocolate covered double-dipped peanuts!

Chocolate Peanut Clusters
We roast the finest redskin peanuts and set them aside to cool overnight. Then we take a handful of peanuts and dip them in a chocolate vat. We dip them again to assure that the cluster is loaded with rich chocolate. then we set them down on waxed paper to cool and set up. Lastly we put them in a place waiting for you to ask for them.... and we ship them out to a wonderful lot of customers!

Chocolate Pecan Turtles
We buy the freshest pecans, place them on an enrobing belt, smother the pecan bottoms with a caramel center and enrobe them in chocolate. We place each pecan/caramel center on this moving enrobing belt. Tempered chocolate is flooded over the centers. Each pecan/caramel center is covered with as much chocolate as it will hold and the excess drains off on each side through slits in the wall of the cup. The entire final piece goes through a long cooling tunnel where the chocolate sets up firmly. This is a very labor intensive piece to make but it is in high demand! Some know it as a "turtle" but we call it a caramel pecan cluster.

Use properly sealed plastic bags or glass jars. Store at 70 degrees or lower. You can store at 32 to 35 degrees in refrigerator for up to 18 months, if sealed well.

Curry Almond Spread

a wonderful dip recipe

16 oz. cream cheese
2 tsp. curry
1 cup chutney
1/2 tsp. mustard
3/4 cups sliced almonds
1 or 2 green onions

Combine the cream cheese, 1/2 cup chutney, curry and mustard.

Place in a bowl lined with plastic and refridgerate.   When ready to serve, turn onto a platter, top with the remaining chutney, slivered almonds, and sliced green onions.   Serve with crackers.
