Ashlock Pitted Prunes
We use the softer Ashlock Prune variety because it is the finest prune available. Sometimes this prune is known as a French Plum. The Ashlock Prune is pitted mechanically, and remains as a whole prune fruit. Then the prune is steamed to give this prune a softness and raise the prune's moisture content. We never carry the harder and drier Elliott Prune because it lacks the natural prune sugar goodness and wonderful prune flavor we get from the Ashlock Pitted Prune.

Chopped Floured Dates

Honey Banana Slices
we import honeyed sweetened banana slices from the Phillipines. Since the companies in the Phillipines started exporting honeyed sweetened banana chips also know as honey sweetened banana slices in 1982, we have imported it as an ingredient in our trail mixes. The plantan banana is sliced thinly. Then it is boiled in scalding water for a short time, then run through a continuous oil cooker to get the crispness of the bana chip, and finally dipped in a sweetener for final preservation, crunchiness, and color.

Imported Angel Flake Coconut
Years ago (the 1960's) a company started making a wonderful bakery product. They called it Angel Flake becasue it was sweet and added a great coconut piece to any baked product. The Angel Flake Company was bought oiut by Bakers many decades ago. Today this is Baker's most popular coconut product. In the Philippines coconut is commercially grow and exported to the United States. The largest firm is Bakers Coconut, a division of General Foods. The coconut is cut into various sizes and shapes and dried to a low moisture level. Sometimes it is sweetened such as in the Angel Flake product. One of the most popular cuts is a flat cut string that is about 1/8" wide and about 1-1/2" to 2" long. This is called Angel Flake Coconut and is what is commonly sold in groceries. It is usually used by candy makers for making "haystacks" which require a coconut covering. Bakeries use Angel Flake for garnishing cakes and cookies. Health Food stores sometimes stock it, but usually shy away from sweetened products. It is commerically found on the top of hostess snowballs sold in most grocery stores. The popularity is that there is a goodly amount of cocnut showing in a string and it is not easily broken becasue it remains filled with more moisture. In fact, you can squeeze it into a ball. Imported Unsweetened Sliced Coconut
A coconut sliced product that is often in damand is the chip or sliced flat-cut coconut. This is a cut of coconut that is very thin in depth and 1/2" wide by as long as possiblein length, often up to 2" long. It is very thin and is called ribbon coconut. This item breaks easily so it is harder and harder to get because Bakers Cocnut doesn't like producing this item in small quantities for smaller users. If the normal gem sliced coconut is broken to smaller sizes - 1/2" x 1/2" - then it is called a "coconut chip". More recently we have been receiving "mill run" which is a fancy name for all sliced, whatever the breakage, from 1/2" to 2" long. This has worked out well for us because we use it primarily as an ingredient in trail mixes. The slice is a "gem" product - or unsweetened. It is seldom used by candy makers for a coconut covering. Bakeries can use it for garnishing a baked goods, but they usually use Angel Flake. Health Food stores oftem promote Gem Sliced for trail mixes or "gorp". And firms like us, ingredient food manufacturers, use it for their product line. The popularity is on and off over the years because the use of gem sliced coconut is extremely specific. Tart California Apricots
The California apricot is tart and lacks the natural sweetness of the apricots raised in Turkey and Australia. Most of the crop is sent to the canneries to be used in canned apricot markets. Thae apricot is cut in half to remove the stone, and then preserved with a sulfer product to keep it bright orange. We carry this fine apricot, but it is a lot more costly than the Turkish malatya Apricot. There is a crowd, however, that loves the tart california apricot.

Whole Deglett Pitted Dates
Deglett dates are extremely sweet and firm. They are an excellent date to ship long distances and these dates keep their freshness for a long time. The firm skin on a deglett date protects this date from abrasion by other dates in the box. Most dates are softer and do not keep well. They are only shipped during the holiday season right after they are harvested in October.
