Blanched Almonds - Raw
Sometimes it is important to take the skin off the almond. This is called "blanching" and it is often necessary if you are making certain cooked products or baked good. The almond is scalded in boiling water, much like blanching a peach, and then immediately dipped in cold water to make the soft skin separate from the nut kernel. Then the nut and skin are "spit" through rollers to remove the nut and skin and finally the nut is dried over a conveyer belt using a Procter and Schwartz drying oven. The blanched almond costs more becasue it is processed further and about 7% of the weight of the nut as a skin is lost in the removal process.

Nonpareil Almonds - Raw
We always buy the finest almonds from the best almond orchards. They ship us their largest almonds ... The almond kernel is found in a shell that looks somewhat like a flattened peach stone. In fact, almonds are related to the peach. There are at least five almond varieties, but the nonpareil almonds are the most popular. Every alternate year, the crop is small in total nuts grown. This scarcer crop yields huge nuts. The following year, the trees are laden with almonds, but each nut is smaller.

Nonpareil Almonds - Roasted & Salted
One of the most popular uses of the almond is to roast and salt it. We make large production runs of roasted and salted almonds in our plant every day. This almond product is an ingredient for mixed nuts and some trail mixes. The salt we use is very specially compounded for our industry and has special features that allow it to adhere. It is called 50-50 flour salt and we apply it when the nuts are just hot and freshly roasted to bring out the fullflavor!

Nonpareil Almonds - Roasted & Unsalted

Sliced Almonds
When we need a sliced almond, we fire up our Urschel CC slicer and get ready to slice up to 4,000 pounds of almonds an hour. The almond has to be heated to about 160 degrees to make it soft and pliable. Too much heat and it cooks the almond thoroughly. Too little heat and the cold nut (almond) shatters. The optimum temperature gives us clean perfect slices of almonds as we make the wonderful sliced almond. Bakeries and candy manufacturers love to use sliced almonds for garnishing their specialties. We are the only firm in the northwestern United states slicing almonds and we have done this since 1982 for thousands of customers.

Slivered Almonds - Raw
The almond can be cut in a shoestring patter using our urschel cc slicer. We change the blades to use a serated pattern and pass the almond nut through the blades. we use blanched almonds to give us consistent harness for the cutting process. The finished product is a blanched slivered almond. This is often used in cooking and also in cookie making by bakeries. People love it as a snack food.
