Hazelnuts - Roasted & Unsalted
The roasted hazelnut has a full, rich flavor that is distinctive. Many people love the "woody" taste and the hazelnut makes an excellent nut to add to mixed nut mixtures or trail mixes because of the unique and distinctive flavor. it is truly a special treat when you get them roasted and unsalted - a gourmet product. we use them when we are panning them with a chocolate coating.

Hazelnuts - Raw
The hazelnut is one of the most unusual nuts. The hazelnut is shaped like the helmet of a Roman warrior. Hazel is the Anglo-Saxon name for helmet. They are grown only in a few places on this earth. The actual hazelnuts is found only in Washington, Oregon and British Columbia. The filbert is a distant cousin. The filbert, comes from Turkey and Greece. It is named after St. Filbert because the plant blooms on St Filbert's day, which is in mid February. The hazelnut and filbert are close cousins in the same family of plants.

Hazelnuts - Sliced
we slice hazelnuts by heating up the nut to 160 degrees and then putting the nut through our Urschell CC slicer. If we heat the nut too much it becomes too cooked and not very sliceable. When used too cool, the nut tends to shatter. So we have to get the exact temperature to slice the hazelnut - something we have done well for over 19 years! Bakeries love the slice hazelnut as a garnish and gourmet chefs also love to sprinkle the sliced hazelnut over a main dish to make it appear appetizing.

Use properly sealed plastic bags or glass jars. Store at 70 degrees or lower. You can store at 32 to 35 degrees in refrigerator for up to 18 months, if sealed well.

Our Very Favorite Recipes

Curry Almond Spread

a wonderful dip recipe

16 oz. cream cheese
2 tsp. curry
1 cup chutney
1/2 tsp. mustard
3/4 cups sliced almonds
1 or 2 green onions

Combine the cream cheese, 1/2 cup chutney, curry and mustard.

Place in a bowl lined with plastic and refridgerate.   When ready to serve, turn onto a platter, top with the remaining chutney, slivered almonds, and sliced green onions.   Serve with crackers.
