Almond Brittle

Near the end we add a generous amount of pure rich butter for flavoring, and finally vigorously stir in a very reactive foaming agent to make this exceptional almond brittle.

Amond Roca
We take sugar and butter and cook them together with a little water to a very high heat. At a critical temperature we cast the batch onto a slab between stainless steel candy bars and wait for the sheet to cool a bit. Once it reaches a lower temperature, we score the slab mixture with a special cutter, and wait for it to cool to room temperature. We break each piece apart and immerse the different cut rectangles in a chocolate covering, topped by a nut mixture. Many know this as a product called almond roca or almond nut toffee.
