Almond Brittle
Making these gourmet brittles takes a bit of skill since we follow special recipes that we have developed over many years in our plant. Here we add raw almonds to the sugar and corn syrup and cook to a high temperature. Near the end we add a generous amount of pure rich butter for flavoring, and finally vigorously stir in a very reactive foaming agent to make this exceptional almond brittle.

Amond Roca
We take sugar and butter and cook them together with a little water to a very high heat. At a critical temperature we cast the batch onto a slab between stainless steel candy bars and wait for the sheet to cool a bit. Once it reaches a lower temperature, we score the slab mixture with a special cutter, and wait for it to cool to room temperature. We break each piece apart and immerse the different cut rectangles in a chocolate covering, topped by a nut mixture. Many know this as a product called almond roca or almond nut toffee.

Cashew Brittle

Use properly sealed plastic bags or glass jars. Store at 70 degrees or lower. You can store at 32 to 35 degrees in refrigerator for up to 18 months, if sealed well.

Our Very Favorite Recipes

Curry Almond Spread

a wonderful dip recipe

16 oz. cream cheese
2 tsp. curry
1 cup chutney
1/2 tsp. mustard
3/4 cups sliced almonds
1 or 2 green onions

Combine the cream cheese, 1/2 cup chutney, curry and mustard.

Place in a bowl lined with plastic and refridgerate.   When ready to serve, turn onto a platter, top with the remaining chutney, slivered almonds, and sliced green onions.   Serve with crackers.
