Butter Toffee Cashews
A very simple way to make the full flavor of the cashew come out is to make a mixture in a copper pot that is filed with brown sugar and butter and water. Bring to a boil. Add cashews that have been roasted and are ready for the coating. keep turning the bowl as the nuts get an kinda even rustic coating.

Toffee Mixed Nuts
Another special corn syrup recipe. We stir a blend of sugar and butter in a double boiler steam kettle and when the temperature is just right we stir in the nuts. They cook in the pot and we turn them out on a cooling table and make sure they do not clump together as they cool to the final stage.

A little salt is added to give the nuts a crunchy sweet and salty flavor.

Use properly sealed plastic bags or glass jars. Store at 70 degrees or lower. You can store at 32 to 35 degrees in refrigerator for up to 18 months, if sealed well.

Our Very Favorite Recipes

Curry Almond Spread

a wonderful dip recipe

16 oz. cream cheese
2 tsp. curry
1 cup chutney
1/2 tsp. mustard
3/4 cups sliced almonds
1 or 2 green onions

Combine the cream cheese, 1/2 cup chutney, curry and mustard.

Place in a bowl lined with plastic and refridgerate.   When ready to serve, turn onto a platter, top with the remaining chutney, slivered almonds, and sliced green onions.   Serve with crackers.
